Take the client, but only after you understand the mechanism of what makes them difficult. "Large but difficult" is a label, not a diagnosis. Difficulty comes from different sources, and each one calls for a different decision. A client who changes scope every week because their own market is unstable is a different problem from one who is disorganized, and different again from one whose people treat vendors badly. The first you can contract around. The second you can absorb if your team has slack. The third will corrode your best people, and no invoice covers that.
So before you sign anything, find out which kind of difficulty this is. Talk to two or three of their former vendors, and ask your prospective day-to-day contact how decisions actually get made. You are looking for the specific pattern behind the friction, not a general reputation.
If the pattern turns out to be structural but containable, take the work with the boundaries written in: a tightly defined first phase, a clear change-order process, and a named decision-maker on their side. Treat the first ninety days as an experiment with a built-in exit, not a commitment to the whole relationship.
